When I "reply" to a form submission, is that reply saved or accessible somewhere? And if so, is the resulting email thread/conversation available?
Second question: When I reply to a submission, can I set it somehow to automatically send me a copy?
If I understood correctly you are wondering is reply on submission saved somewhere or accessible somehow. If your form is submitted and you get notification/submission to your email it is possible to reply on it but your reply will represent regular email. Also if you did not set reply email address, in most cases is set to firstname.lastname@example.org. In case that your reply address is not set to good address it will not go to person who submitted the form. Also every mail that you are replying to is saved to your sent folder in some mailbox.
If you want that person who submitted the form get an email of successful submission then you need to set Autoresponder.
Not sure what you meant under 'When I reply to a submission, can I set it somehow to automatically send me a copy?' because if you reply on submission and if your mailbox is set to save sent messages you will have that mail in Sent folder.

Thanks. Sorry I wasn't as clear as I could have been. The question is actually from my boss who logs into JotForm, replies to email via the link in the "submission" view (see photo). He wants to get a copy of his reply (Bcc:) sent to his email address so he can continue the conversation there through his regular email client (Outlook).
I think he could probably use the "Forward" option and add his own email address along with the submitter's address, but then he has to type them both in and runs the risk of mistyping. And it adds an extra step.

Unfortunately that is not possible.
Only possibility that you have is to use some mailbox to see all replies outside of JotForm.
