I have tried to set up multiple email notifications to send me an email once a form is completed, but for some reason it keeps filtering out my email - and only my email. We have multiple people setup to receive the confirmation emails and they have all been receiving them but me, even though my email is listed to receive them as well. In the confirmation emails they are receiving, my email is not included in the recipient list, even though it is included in the email notification list for the form. This has happened with two different forms we have. And my email is not list as a blocked on our account. Any ideas what the problem is?
I've check my email thoroughly and they are not being redirected to a spam folder or some other folder.

I presume that you're referring to this email address: firstname.lastname@example.org. Is that correct?
I've checked the email notifications in your form and I see that the one that is sent to the mentioned email address is also sent to this one: email@example.com and this address is in our bounce list because it doesn't exists.
This is why the notification is not being delivered to your email address, so please remove that address and leave only yours.
