Today I received a jotform from a customer. I contacted the customer and they indicated that they did not submit the jotform. The jotform contained personal information that only the customer should've known. How can I see the email address of the person who submitted the jotform?

In order to see the email of the person who submitted the form you need to add an email field to the form, make it required:
To make sure the user is entering he's own email you can add an Email Validator widget:

This way, user will enter his email and receive a confirmation code on the email. Only after entering the email they will be able to submit the form:

What if the jotform didn't have email validation? Any other way to view who submitted the jotform?

If you mean to check the submission which is already submitted without email validation widget, you can get the IP address of the user from where the form is submitted. This information might help in finding the person who submitted the form.

You can view the IP address of the submission from the submissions view by enabling the IP address option.

I think your main concern is when people do not submit the email in the form after clicking on submit button, to really force an user to send their email address here is what you need to do:
-Add an email field
-Make this field required
-Add the email validator widget.
