I was receiving emails when I would have a new GSI submission, however now I have no idea that anyone's submitted anything unless I check JotForm. It's super convenient to have that heads up in my email!

What I would suggest is to change the email address on the email notifications to be set as your own instead of someone else.
You can do that by following the steps here: How to properly Change and Test a New Email Recipient Address.
Now I have checked the email that is set as your account email and it is not in our bounce list (the email that you will receive this email to) so I would suggest checking the bounce list as well if the email notifications are being sent to some other email address.
