Hi, what is the function of the first two fields in the 'grid listing' in submissions view, it looks like an envelope and a flag?

You are correct. It's an envelope and a flag.
Envelope - This icon is used to mark submission as "Read" or "Unread".
Flag - This is useful when you want to mark some submissions as important. Let's say you have thousands of submissions. This will help you indicate which are the important ones.

What does it mean that a submission is "Read"? Read by whom? Thanks!

The submissions of a JotForm can be viewed only you when logged into your account. If you view the submission from the submissions view by selecting it from the list, it automatically marked as Read which means the submission is viewed/read by you.
