I can see the phone filed on jotform but not the email that I get from the contact form. Also would like to allow characters in my comments like an apostrophe.

I checked a cloned copy of your form and indeed, not all of your fields are being included:
You can add additional fields that may not have been included by either creating a new notification:
Or by manually adding the fields to your current notification from the options on the right:
Clicking on any of the field names in the right hand toolbar will add the appropriate field ID to your notification. This will include that field data in the email.
