I'm having a hard time as to when do I indicate to be informed via email that a submission has been submitted?

I checked the email notification for your form and there is not currently a Sender E-mail for your notification. This will prevent it from being sent upon completion of submission:
Change that field to "firstname.lastname@example.org" and your notifications should then be sent when submissions are completed.
