I have created a custom order form. I would like to send my client a PDF of the signed document ( as it appears when they are filling it out) I do no like how it looks when I go and click on view submissions. It's very generic and does not even show the logo, header, or text. I would also like to print the form, after it is filled out, and it look like it does when the client is filling it out online.
I hope this makes sense.

The PDF submission layout can not be customized to the form's layout. We know It's very generic when downloading form's submission as PDF.
We have received some users's request about this feature, I will add you to the list of people who have requested it, so if it gets approved and implemented in the future, you will be notified via this thread.
Meanwhile, you could try enabling the Headers and Text in your form.
A possible workaround for: "I would also like to print the form, after it is filled out, and it look like it does when the client is filling it out online. ",could be adding the print button to the form.
In this way you can:
1) Add an edit link to your email notification:
2) Go into the edit link once you receive the submission in your email, and print the form:
As you see, it has a very similar design of the stand alone version of the form, with the filled data of the customer in it.
Hope this helps you, if you need anything else, please open a new thread, we will be glad to assist you.

We have recently enabled our new submission PDF editor on:
Submission Page -> click Get PDF -> Customize PDF
Using the editor, you can add logo or text and style your form's answers as you wish.
Your feedback is also very much appreciated.
All the best

I have been re-sizing all my fields so the text is not overlapping, but now I need to add a page so they all fit in. How is this possible?

The page is automatically added when you resize a field, and there is no more room in the current page.
