If I undestood correctly, you would like your form to autofill with information previously filled out by your user, if this is the case, please take a look at the following guide that explains to you step by step how to achieve this, using the Field Prepopulator app:

I don't want to pre-populate data from information previously submitted on a form. At the start of the form I ask them to input a course name, before the form is submitted, I would like to see that information populate as a header on another page. Does this guide show how to do that?

I'm sorry, but I'm not quite sure if I understand your question correctly.
If you want to add a verification step to allow your users to verify the courses they've requested you can use our preview before submit widget to do this. You can even configure it to only show the courses list if you want to.

What I want them to be able to list all courses on the first page.
Example:
Course 1 Leadership
Course 2: Sales
Course 3: Communication
Click the next button to go to the next page.
At the top of the next Page I would like it to prepopulate the course name they listed as course 1.
Example:
Course 1 Leadership
I will then have questions for them to answer about this course.
They will click Next - new page - at the top of it prepopulate at the top of the page, what they entered as course 2. They will answer questions about that course.
Does that make sense?

This can be accomplished using the "Update a form field value" condition:
You would set up conditions based on their course selection to update the appropriate fields or show the appropriate fields when that selection is made:
