For the default file upload form field
Is there a file size limit on JotForm's end, or can we set them to upload an unlimited number of files of an unlimited size?
Is there a file purge time limit on JotForm's end, or do the files stay out there indefinitely?

We do have file size limits, please take a look at the following guide for details: Changing-the-Upload-Size-Limit
Basically, we support files of up to 1GB in size, and we recommend that you do not put more than 25 files per submission. Recommendation for 25 files per submission is because connection timeouts are a common occurrence even at this day and age, and the more files that your users are trying to submit, and the larger these files are, the more chance it has for a timeout issue to occur and interrupt the upload of files in a submission.
If you wish to integrate with external services, such as with your DropBox or Google Drive, please take a look at the guide linked above for the exact file size limits of files being forwarded to these services through JotForm forms.
There is no expiration or file purge time limit on JotForm. As far as we are concerned, any data that you upload to our servers will be kept indefinitely, unless you delete it. As we firmly believe that the form data is completely yours, once you delete your form submissions, they are completely and permanently removed from our servers. For this reason, we recommend that you always export your submission data first, prior to deleting it.
Please let us know if you need further clarification regarding this, or kindly open a new thread for any other questions or issues you may have with your forms. Thank you.
