We would like the option to have our form respondents receive a
copy of the submitted form. Is this possible?
I did a search among the Widgets and a forum search but could not find
What would be best is if we could add a check box for Yes please
email me a copy, and another box stating the email address, or
just an email box, and if there was a email address in the box then the
submit would automatically send the submitted form to the user's
email address + our normal Google Drive integration location.
I know it is a lot to ask, but I am sure that other users must have asked for this
type of option before ...

Have you tried using the Autoresponder email in your form? Autoresponder email is the email being sent to the respondents of your form either it is a pre-written reply or just the copy of the data they have submitted in your form.
To create an Autoresponder email in your form, just follow the instructions provided in this article.
