My form responders have been including their email addresses on the entries/responses but have not been getting and email confirmation/copy of their submission.
Can you help me figure out how to set it up?

I believe by "form responders" you mean those that are filling in your their email addresses on your form and submitting the related information to send to you.
If that's the case then you would need to see this guide here about Creating an Autoresponder which will allow you to send those users a confirmation copy.
