Why aren't the answers typed into text boxes sent to us?

I understand that you are not receiving the text entered in the text boxes to your notification emails. This is due to the field is not inserted into the body of the notification.
You may delete the existing notification and add a new notification so that the updated fields are automatically inserted into the notification.
