Just concerned about control/security of customer data. If I don't need payment processing, can I keep all the forms and data on my own server - or does it still all go through your site?

The forms are hosted in our servers and all submissions will be stored in our Data Centers. However, you can integrate different file sharing and storage services to the form, like Google Drive, Dropbox or an FTP server. If you connect your form to any of the file sharing services, a copy of the submission will be transferred there, you can then delete the submission in your account, please do take note that when you delete a submission, it will permanently be deleted in our end and we do not keep backups of them in our servers.
If you wish to run the form builder and the forms in our own server, you can do that by purchasing the license JotForm Basic App found in this page.
Regarding payments, we also don't store or process sensitive information like credit card details, we have payment integrations to Paypal and other online payment processors that has secure payment gateways for this transactions.
