Not sure why this has started to happen. Did I click something wrong? I do not need it to do that.

Could you give us a screenshot of the problem? If I understand your correctly, you are getting the PDF submission of the form in your notification? I've checked our mail logs and I'm seeing test notifications.
To remove the PDF submission attachment to your notifications, you need to disable it in your Email settings.
Make sure to check all of your notifications. Also, please make sure that the "Sender Email" field and the "Sender Name" is filled out or set to avoid problems in your email notifications.
After that, make some test submissions by filling out your form and clicking the submit button. See if you are still having problems.
