Can I change individual text boxes without having to go into the CSS for each box? I've set the max size for a name to be ~30 characters and the Gender to 1 character, but both text boxes stay the same width.

In regards to your question, no, it is only possible to do it over the CSS tab - with single click (all elements with the same class) and double click (a single element), depending what you want to achieve.
