However, once created, it can only be sorted from the report itself, not filtered. You can adjust what is included in the report while editing it, however, the filter cannot be adjusted from the live view of the report itself.
Yes, but during creation can I choose a specific field to filter by. For example, if I have a multiple-choice field of department, I would like the grid to be for a specific department

Unfortunately it is not possible to filter the submission data based on a conditions. It will only allow you to select which field you want to be displayed in the report but not filter the data.
You may like to take a look at our "Submission View" app and see if that fits into your requirement.
