What are encrypted forms and why I get gubberish text in my submissions?

Hi, I noticed recently that you provide encrypted forms. Now every time I create a form is asking me to download some key. I tested the last form I created and its returning me a bunch of gibberish. If I have to upload the key to my server thats ok, but my quoestion is, do I have to do it even if I dont want to, how to turn the encryption off and if I have to what are the steps? Where to upload the key? thanks
