I would like to give my customers an option to fill in a quote request form that would look like this:
1 single bed
5 large cartons
1 flat screen TV etc etc
Can this be done please?

Would a Text Area field work for your list of packing items?
Something like on this form:

Yes that would work and its obvious now you have shown me, thank you. The next problem is that only approx 50% of people filling in the main form would want to use this feature. Is there a way this can pop up from a link or go to another page of the form via a link but only if the customer wants to use it?

You can set up conditional logic to hide or show the text area field, for example create a radio field asking users whether they would want to include a list or not. When answer is 'No' then the text area field remains hidden, when answer is 'Yes' the text area field is then displayed.
You can visit the following form to see how it looks:
Hope this helps.
