How can I see how notifications come in.

I have multiple forms being used right now and they come in as notification 1.  I want to change the name ?

The process of changing a single recipient email address on your form notifications is just the same on that user guide.

Double clicking the "Notification" text in the area in the screenshot above will allow you to change the label for the notification.

You can also customize the sender name and various other properties of your notification from the same place.

I can send this form to a personal email without my account email being notified?

Yes, the email will be sent to whatever is entered in the recipient email address field.  If your account email is not a recipient, it will not receive the notifications.
