If I change the email address in the feedback form when the submit button is pressed it will not make the change it is picking up my email address from a earlier form.

Please note that "Test Email" button is always associated with your JotForm account email address. If you need to test the form with different recipient, submit the form and it will be correctly sent to the specified email notification recipient.
Currently, there is no Email Notification configured on your form. Please take a look at the next guide to find out how to add it.
It is also possible to change recipients on existing Email Notifications.
