Customers are recieving receipts stating they signed up for "spring soccer". I double checked the forms and the coding and everything appears correct.
What step am I missing?

I have cloned your form to check it out, and made a test submission on the cloned form. It showed correctly as Fall Soccer League in my Inbox.
This leads me to believe that there might have been a caching issue where the old option was still in the form caches, so I have now cleared your form caches, as well as form caches of your main account - genmove.
