I've had a few people say they never received my form. Is there a way to confirm that I actually did send it via email?

This is possible to check sent/received emails from Account Email History:
You may suggest your clients checking their Junk/Spam folders to see if the messages are there.
Please also note that when you use a custom 'From' email address, the email may be evaluated as fishy by some email providers (since we show your From email address when it is actually sent from our servers). For example, Yahoo does not allow sending emails bypassing their servers. It means, that our default senders (email@example.com and firstname.lastname@example.org) may be more reliable in terms of email delivery.
You may also consider sending the invitations manually from your email client to make sure that these emails are sent though your email server.
