I have setup a sender email address using our SMTP account details. However when I receive the test emails, the email headers say that it is being emailed by amazonses.com.
How do I change this so that emails are being sent using our server?

I checked your account and see that you have several forms. Can you please provide us ID of form that is causing this issue?
Also in the meantime you can check if you set properly SMTP settings inside of you notification. Please check this article:

Seems to be working correctly now. Maybe a bit of time was needed for the changes to propagate.
