Any chance the "Submissions" page can be made less awkward? Either allow adjustable viewing windows or put them side by side?

Unfortunately, the submission page is fixed.  You could download your submissions in Excel format for much easier viewing:

https://www.jotform.com/help/44-How-to-Export-Form-Data-to-Excel

That would give you a much better layout than the submission page.
