Thanks in advance for your help.

Unfortunately, the payment option Donation is allowed only once.
Unlike the Products which can be multiple items, a Donation type of payment is configured to be only one.
Instead you can create a multiple-payment form. Inside of this article you can find out how to do it: http://www.jotform.com/help/182-How-to-Create-a-Basic-Multiple-Payment-form
Hope this will help. Let us know if you need further assistance.

Hello,
bassically I need to have the option for one off donation with the amount at the discretion of the user and the option of choosing a recurring donation on a mostly bases ideally the user can set the amount as well.
Is this achievable ?

In this case, you have to create two forms. One for subscription and one for donation. Then you can combine the two in a single form and let users select the type of payment they want.
Inside of this guide you can you can find out how to create a multiple-payment form:

Considering that subscription (recurring) payment form can not accept custom donation, possible workaround would be to edit the recurring payments manually through the source code edits and have it subscribe for the custom values as well.
You can hire a developer, if you do not know how to do it yourself, since we do not help with such things.
