I was wondering if it were possible to set up a weekly excel report of one of my forms and have it emailed? I would also need it to be minimally customized as I would only need 2 or 3 fields to be included..

Unfortunately, we do not have that feature where you can set a scheduled weekly reports to be emailed to you.
However, you can set your form to be integrated to Google Spreadsheet, that will give you a real-time list of your submissions.
I hope that gives you an idea on how to proceed.
