Do you also know if It's possible to create a subsection in a template and then be able to add an "add" button or "more" button which when clicked it duplicates the section you just created?
For example if I wanted to create a work history section and then an applicant wanted to add more work history they could click the "more" button and continue filling in information?

To do you would need to utilize a widget. I do believe that the best one for that would be Configurable list.
