I was just informed that I am running out of space in my jotform account whereas I only have 6 total submissions and no uploaded files. Could you please explain why/how my account is running out of space?

No you are not running out of storage space. I will forward this to our backend team to verify this. You should be getting a warning because the number of SSL submission is almost to the limit. You have 7 SSL submission. Once you pass the 10 SSL submission your form will be blocked for the month. Please keep this in mind for the next few days.
