I would like to collect all the information in the registration form for but It won't allow me to direct it to a specific email address? Am I doing something wrong?

I'm sorry but i wasn't able to understand your concern. I've checked your form and you have created a notification for your form. I made a test submission and i was able to receive an email. Don't you receive notification emails? I've also checked your email logs and JotForm has successfully sent your notification emails. Can you please check your spam/junk folder?
