First of all, Jot Form rocks. It is so easy to use and looks very professional!
My question is this: I am using the form for people to register for events. I need to set limit on how many people can sign up for the event. How do I do that?
A bonus would be for me to continue collecting registration info for people past that limit with a note that says "we are booked but I will call you if there is a cancellation" Is that possible? If so, how do I do that?

That's possible. Here's a guide for that: https://www.jotform.com/help/137-How-to-Limit-Submissions-in-a-Form
After following this guide, on the same tab, you'll see the Warning Message where you can put your message like the one you mentioned above.
Hope this helps!

The only thing is that I have the form set up so that they can choose what date on the form. I need the limitation set per date. For example, I only have space for 10 participants on each date. How would I go about it this way?

Perhaps you can use the following widgets instead:
https://widgets.jotform.com/widget/ticket_purchases
https://widgets.jotform.com/widget/inventory
https://widgets.jotform.com/widget/quantity_gift_registry
https://widgets.jotform.com/widget/gift_registry
Here's an example form using the Inventory widget: http://form.jotformpro.com/form/52575015429961.
I see the dates as the product options, users then can purchase some kind of ticket or booking on that specific items with a date on it, the items have a quantity limit on it.
I hope that helps.
