I downloaded my fillable PDF form but when I press submit I don't receive any email or submission notification.
What do I need to do to ensure this works?

You do not have any submission in your forms. If you have successfully submitted the fillable PDF, you should see the submission in the form submission page (https://www.jotform.com/help/269-How-to-view-Submissions).
But you should also make sure that your form notification email settings are properly configured. I checked your two forms and they aren't configured properly. Your sender email is not set, but I've fixed this for you:
Lastly, I would suggest adding both firstname.lastname@example.org and email@example.com to your contact list in your Hotmail account. This is to make sure that the form email will land to your inbox, not to your spam folder.
