I also need the person that's filling out my form to receive a copy of what they've sent to their email address.
I have followed the steps described above, but I don't see any field where they can enter their email address or anything that would ask them ''hey do you want a copy of this submission sent to your email?''

You need to first add an Email field to your form, in order to use an Autoresponder. When you are editing your form, you can add an email field from the Quick Tools on the left. please refer to the image below for visual guidance:
You will then be able to select this field as the Recipient Email in your Autoresponder:
So the email will be sent to the email address that is entered by the user in that Email field we've just added in the image at the top. You may also want to make that Email field required, so that your users must enter an email into the field.
