I am looking for a way to automatically populate our calendar with the information provided in the JOT form. Please let me know if this is even possible?

If I understand you correctly, you wish that when a user makes a submission on your form, an event /appointment is added to your calendar software somewhere outside of JotForm.
We can't update third-party calendars directly from JotForm. If you wish to forward your submissions as new events in your Google Calendar, or Office 365 calendar, you may want to integrate your form with a third-party service called Zapier:
