Hi. When my client submits a form, it doesn't show the entire form, it is only showing a few fields. How do I ensure that all form content is submitted for my records? For example, on the policies form, I only get the client's name and signature and not all of the terms outlined on the forms.

I believe that you are referring to your JotForm titled "DCP Policies". I see that this JotForm has one submission and it seems that the form was submitted without entered the information that you are looking for.
In order to make sure that the information to be filled for these fields, you may mark them as required so that the form cannot be submitted unless the required fields are entered.

Statement. Otherwise, how would this document hold up legally if it doesn't include the terms, policies, etc?

So, I want to be able to see the entire form and not just the fields that
my client completed (as illustrated in the attached screen shots. So, for
example, on the Contract and Model Release, I need to see all the html
terms outlined in the form, followed by the client's signature. Otherwise,
how would this document hold up as a signed contract if I only get the
client's name and address fields. Is there a way to set up each form so
that what I create, is what I will see when the client submits it?

This is possible to select 'Show Headers and Texts' option on submissions page in order to include the text data into submission details, and then print the form entry or download it in a PDF format. Please see the next guide.
How to show headers or text for contracts/terms/agreements in the PDF format of a submission
Text fields are not included into emails, but you can manually edit email templates to add the text information you need.
