My form is not submitting where it was yesterday, I fill out the phone with all the details then it sends me to a page saying "Phone is required" meanwhile the phone number has been submitted? Whats going on with Jotform ?

I did a test submission to one of your form and I was not able to replicate the issue you are reporting - http://www.myjotform.com/form/40434961679565. I was able to submit the form successfully.
Are you still encountering this issue? Can you check it again and see if it is working now on your end?

This is going through, but it is still pulling in the wrong values, Its pulling in When ---- with no dates!
But on my form I have Date of Arrival and Date of Departure.
I did have a when Calendar but I took it off because it was not working, clashing with my JS on my website.... Why would it still be pulling in the old field?

Are you referring to the Notification email that you received? I noticed that on my test submission this is the email you receive:
When you made changes in your form especially delete/remove or add fields it will not automatically reflects on the Notification Email. You also need to modify or create a new Notification email. I checked your form and I see that you have already fixed the issue. I checked one of the submission you received and it seems to be that the dates are now captured correctly.
