I have created the following form:
I have multiple items available for sale in my Paypal integration widget. This includes shirts with various size options. I have already had to order the shirts from my vendor and provided quantities with sizes. So, I am limited on availability obviously. If I reach a situation where pre-orders begin to approach the maximum available quantity of a particular shirt size, can I remove an option to order one of those sizes, or of the shirts altogether but leave other items for sale? If I do so, will it negatively impact the data of existing orders in my records? Thanks for your help!

Deleting a product on Paypal payment tool doesn't erase your transaction history or data about that product. You can still find the transactions on Paypal or submissions on JotForm.
For your other, question yes you can delete or edit specific product on your payment tool without touching others.

Also, you can add/remove size options or edit amount, deleting the related row will do what you need.
