I'd like to make a check off of various options that will only allow each option to be chosen one time.

Meaning: I would like to have approximately 50 options that people will be able to choose from. Once a person has chosen an option, it should become unavailable to all future people, although it can be viewed but perhaps grayed out. Is this possible?
