In the event that one of the runners cancels can I issue a credit the money received and also can the statistics captured for the list of runners be corrected and updated?

I believe the only way you can apply a credit to the payment made by one of your runners is through your PayPal account. If you have questions doing so, you can contact PayPal support, I'm sure they can help you with that.
Regarding the information or statistics captured or saved to your Jotform account that needs to be corrected or updated, unfortunately, the payment information in the PayPal field can never be updated.
What you can do is add a hidden field on your form so it will not be seen by your submitters. Name the hidden field as "Remarks".
