Hello there,
I have 100 questions (multiple choice type) and I need to receive the total results of the test when the click on "send".
Being:
Wrong answer 0
Empty answer 0
Correct answer 1
I suppose I have to fill in "calculation values" per each question, but I don't have the knowledge to express that. Can anybody help me, please?

I see that you would like to create a 100 question test to display which answers are Right, Wrong, or got left as Empty.
Based on your current explanation of the scenario you've provided above I believe the assignment of calculated values would likely be best. But from what I understand it seems to me that you need help with assigning calculation values to your fields. I'd like to point out that we have this guide here http://www.jotform.com/help/301-How-to-Assign-Calculation-Value which can help you set that up.
If you wish to go another route though you may find these two options below helpful as well.

Hello KadeJM,
I need to receive the total results by email, together with some contact data and a composition.
I
've been having a look at the templates and I think they only give the results to the user, at the end of the test on the Thank you form. Is that right?Besides, I don't see the calculation values to apply them to my own quiz.
In conclusion, I need to receive something like that:
--------------
Name:
Surname:
Age:
Etc.
Previous experience: (text)
Composition (text)
Quiz Results, total: 34 (the result comes from all the correct answers, being 1).
---------------------
I do not need to receive the 100 answers, just the results, but I do not know what to write on the "calculation values" on every question or what to do next.

In order to achieve this you need to add calculation values to your radio-button questions (1 for the right answer, 0 for the wrong ones):
Now you can add a calculation field and add all the radio-button fields (this field could be hidden, otherwise users can calculate right answer):

Now you can edit your email notification/auto-responder so that it only includes the calculation field and not the 100 radio-button fields:
