Yes, you can certainly change it.
To change the subject line on an email and include a field on it:
1. Open the form on the form editor
2. Click on "Setup & Share" tab on the top toolbar
3. Click on "Email Alerts"
4. Click on "Notifications"
5. Click on the Subject question at the top
6. Click on the field you would like to include in the subject on the right side.
