Is it possible to make these a drop down within text?

Secondly, where you see the I/We in the text, is it possible to make these a drop down, within the text? In the printed version customers simply cross out as applicable so would like something similar online.

Do you mean that you want to insert a dropdown field within text on your form? Or? I'm not certain if I understand your question here correctly.
