We down load all forms in excel format on Monday mornings and delete them to start a new week

You can use this app in order to send an Excel report to your Dropbox account for example : http://apps.jotform.com/app/reports_to_cloud

Another way to achieve it will be integrating your form with Google Spreadsheet, refer to this guide in order to know how to integrate your form with it : http://www.jotform.com/help/228-How-to-Integrate-Form-with-Google-Spreadsheet

Unfortunately, there is no way to schedule an auto-delete of submissions, you can only delete submissions as soon as are received.
