How would I make an event food signup form?

I want them to be able to choose a food item from the list and add their name as bringing it, so that future people who sign up see it as "taken".

If I understood you correctly you want to allow your users to choose a food item and to disable that chosen option for your other users. You can achieve that with Ticket Purchases widget.
