To my understanding in this question it seems that you are asking if it's possible to change the subject of the "edit" to "Approval Response"? Is that correct?

If that is what you meant then unfortunately no that is not possible because the EDIT: prefix is not part of the Email Template since it is only intended to indicate the submission was modified.

I have the email notifications working properly now, thank you !
If I want the approver NOT to receive a notification after he clicks submit, can I do this?

For the approval address to not receive an email after the form is submitted, you would need to set up conditional email notifications:

Setup a checkbox or something of the sort to indicate whether or not the form is approved, then base email being sent on that entry.
You can setup an approval workflow, similar to the one described in this thread:

The UI's are different now that in that thread, but the process is the same.
