I have a few who claim they aren't getting a confirmation response. Want to be able to see some type of log showing that an email was sent to their account.

It is possible that the registrants email autoresponder is being filtered out as spam.
I suggest changing (and I realise it may not be ideal) the Sender Email of the autoresponder to email@example.com
This will give your auto responders the maximum possible chance of being delivered.
If you wish, we can make this thread private, then you could provide us with the registrants email address(es) and we can provide any reference to those email addresses from our logs.
