The form our customer is printing is something they should keep a record of for at lease 7 years.
How do we allow them to print a copy or email themselves a copy of the form?

I'm not sure if I understand your query correctly. Do you mean to have the copy of submission data with the form submitted user? If so, you may setup an Autoresponder in your JotForm so that an email with the submitted data will be sent to the form filling person. Please refer to the guide below that can help you with setting Auto-responder.

You can also place a link to download the submission in PDF format from the Form Fields in the auto-responder.
