I'm wondering if form entry information can be safely sent from, for instance, a SharePoint site and cannot be used or read if intercepted.

Yes, our forms are secured. We are now using HTTPS to our forms by default. If you want to the data to be encrypted and can only be decrypt with a key, you can enable the encryption feature.
Here's our guide: http://www.jotform.com/help/344-What-are-Encrypted-Forms-and-how-to-use-them-as-expert. You have to make sure to keep your key in a secure place in your computer. If you will lose it, you can't view the data in the form.
