I would like to create a variety of forms that i can share with my employees in our shared dropbox folder. I would like my employees to be able to use these forms in the field and for the responses to these forms to be inputted into another folder on dropbox which only i can see. Is this possible?
If I understand you correctly, you would like to integrate your form with dropbox twice. One which you are sharing with your employees and another that you have access only. If I am wrong, please correct me.
Unfortunately, you can only integrate dropbox once per form. What you can do is also integrate your form with google drive. You can share one integration with your employees (dropbox), while the other integration (google dirve) will only have access by your self.
So the responses to the forms shared in Dropbox with my employess will then populate in drive. Will the forms be able to be used over and over again by the employees?

I'm sorry but I think I am not understanding fully your question. As long as your employees contain the URL of the form, they will be able to submit as many time they require. Every time the form is submitted, a copy of the information will be stored in the Dropbox account. The form is not actually being saved in Dropbox or google drive, only the information submitted.
If I am not clear, please let me know and we will try to better explain this.
