I would like to have a single button (on a certain webpage) to click if you want to subscribe to our newsletter, that then opens a form to collect the persons name, email address etc. Is this possible?
I believe that you are looking for LightBox embed method. This method displays a button on your webpage where the form is embedded. When the button is clicked, the form will be displayed as a popup. You can get the embed code from the Publish wizard. Please see the screenshot below:

How do I change the title/properties of the lightbox button?
It says “title me” in preview even after I customized it and saved changes.
If after changing the name on the Form Builder, you can open the preferences and change it there:
If it does not help, please, provide us the link/name to your form, and the link where it's embedded on.
